Bulk Sausages — Buying & Cooking Guide
Bulk sausages by the 5kg and 10kg carton are for sausage sizzles, clubs, caterers and fundraisers — the same butcher sausages we sell retail, made fresh and snap-frozen for volume.
Choosing bulk sausages
Traditional thick and thin beef snags are the sausage-sizzle standard — thin cook faster and go further per kilo, thick hold up better on a flat plate. We also carton gourmet flavour links (pork and fennel, lamb and rosemary, and more) for events that want something above a plain snag. All are made with meat, fat, seasoning and natural casings — no fillers padding out the weight — so allow for a little more shrinkage than a supermarket sausage.
Cooking sausages in volume
On a flat plate or BBQ, keep the heat moderate — high heat splits the casing and burns the outside before the centre is done. Turn regularly for even colour; a sausage is cooked at 71°C internal with no pink. For a big event, part-cook (poach or oven) ahead and finish on the grill to order. Thaw cartons in the fridge, not on the bench, and cook within two days of thawing per the Food Standards Australia and New Zealand guidance. For a sausage sizzle, budget roughly 1.5–2 thin sausages per adult.
Bulk Sausages — Frequently Asked Questions
How many sausages in a 5kg or 10kg carton?
Roughly 60–70 thick sausages or 110–130 thin ones per 5kg, double that for 10kg. Exact count depends on the link size — it's on the product page.
Are they fresh or frozen?
Made fresh, then snap-frozen for bulk cartons so you can portion what you need. Ask for fresh chilled if you're using the lot within a couple of days.
Can you do a specific flavour or recipe for an event?
Yes — for larger orders we can run a specific flavour, casing or gluten-free recipe. Contact us with your quantity and date.
What's in the sausages?
Meat, fat, seasoning, a little rusk in the traditional recipes, and a natural casing. Nothing pumped in to add weight, and no artificial preservative numbers.
