Veal carries more myths than almost any meat. Here's what it actually is, how the Australian product is raised, and how to cook it.

What is veal?

Veal is meat from a young cattle beast, generally slaughtered between 8 weeks and 8 months of age. Because the animal is young, the meat is pale pink, fine-grained, low in fat and mild in flavour — closer in texture to pork than to beef.

Isn't veal cruel?

The reputation comes from an old European system — "white veal" — where calves were kept anaemic and immobilised in crates to keep the meat pale. That system is banned or abandoned in Australia.

Australian veal is almost all "rose veal" or bobby/pasture veal: calves raised with their group, able to move, fed milk and often grass or grain, producing meat that is pink ("rose") rather than white. It's a by-product of the dairy industry — dairy cows must calve to produce milk, and male dairy calves have historically had little use. Rose veal turns that into a genuine, higher-welfare food product. Our veal is Australian rose veal.

Because veal is lean, it dries out faster than beef — cook it gently and don't chase a hard sear on thin cuts.

How to cook the main cuts

  • [Veal schnitzel / scaloppine](/specialty-meat/veal/): pounded thin, crumbed or floured, 60–90 seconds a side in butter and oil. The classic Wiener schnitzel and vitello.
  • Veal cutlet: a small chop off the rack — pan-sear medium, 3 minutes a side, baste with butter.
  • Veal osso buco: cross-cut shank. The braise: brown, then 2–2.5 hours at 160°C in wine, stock and gremolata. The marrow is the prize.
  • Veal mince: the base of a proper Bolognese (with pork and beef), or delicate meatballs. Buy veal mince here.
