Choosing kangaroo cuts

Fillet (rump) and loin are the prime cuts for a fast, hot sear. Kangaroo mince works for chilli, burgers, ragù and meatballs — add a little olive oil or pork fat to compensate for how lean it is. Diced kangaroo suits a long, wet curry or braise where the collagen has time to soften. Australian kangaroo is wild-harvested under a government-managed quota system, not farmed.

Cooking kangaroo without it going tough

Leanness is the whole challenge — there is almost no fat to buffer overcooking. Bring steaks and fillet to room temperature, oil the meat not the pan, and sear over very high heat for 2–3 minutes a side to rare or medium-rare (an internal 55–60°C), then rest for as long as you cooked it. Past medium it turns dry and livery. For mince and diced, either keep it fast and pink or commit to a low, slow braise with plenty of liquid — the in-between is where it goes tough.
